Find a few recent article with the same problem. This section has no updates since 2016, new articles contain good formatted meta description which fit as LD better than first <p> in most cases.

The issue you referenced is a whole other case. In the referenced issue the description litterally ends with "[...]". Here the preview is simply not shown fully. Not a template issue.
