You shouldn't reduce image quality.

Orininally displayed image - 750 x 501.
In your template - 512 x 342.
In my template - bigger.

What's the point replacing =s1200 with =s2560 in you template? Yep, it's bigger. But you still won't get 2560, all you get is an image 800px width, and you could break things.
